One of the most famous recipes from Jammu Kashmir is Kaddu ka ambal which is a healthy and simple delicious curry prepared in short time span with affordable ingredients. In this, Ambal is nothing but a sour and sweet tangy curry prepared by using tamarind and jaggery. It can be prepared with various vegetables; however, Kaddu ka ambal is the most desired one.
Khatta Meetha Kaddu which is the hierarchy of Kaddu ka ambal and also the most famous among North India, eventually the ingredients used in this are different (sugar and raw mango) so the minor change in taste. And to give it nice smoky flavor, one of the ingredients is probably used is “Dhooni”, hence it is optional but highly recommended to use for better taste.
Most of the people are it mush interested to eat Yellow Pumpkin because of its blend taste. But, for those, this will be the right recipe to focus on Yellow Pumpkin.
Ingredients:
• Yellow Pumpkin (500 gms)
• Whole red chilies (3)
• Mustard Oil (3.5 tbsp)
• Fenugreek Seeds (1 tsp)
• Tamarind paste (2.5 tbsp)
• Red Chilli (1 tsp)
• Jaggery (2.5 tbsp)
• Green Chillies (2)
• Water (3 tbsp)
• Turmeric Powder (1/2 tsp)
• Salt
How to Prepare?
• Take Pumpkin and cut into pieces as u desire.
• Put pan and heat mustard in a warm oil.
• Add the fenugreek seeds and red chili and stir it.
• And in a medium heat add turmeric, green chilies, and chopped pumpkin
• Then add salt as u want and a half cup of water, close the pan and keep in seam.
• When the pumpkin becomes well cooked add the paste of tamarind and jaggar.
• Then cook well till it reaches dried stage and stir it gently without mashing pumpkin. And finally add Dhooni (Optional).
• Now it’s ready to serve your choice.
